There is something truly captivating about a beautifully prepared seafood dish, especially one that radiates colour and flavour. This king prawn seafood fried rice is more than just a dish—it’s a showcase of culinary sophistication. As soon as it’s served, the glossy king prawn commands attention, elevating the plate with its height, luxury, and visual appeal.

Ingredients
Seafood Mix
1 large king prawn (whole, shell-on)
6–8 medium prawns (peeled & deveined)6–8 mussels (cleaned, pre-cooked or steamed)
6 calamari rings
1 tbsp butter
½ tsp garlic powder
Pinch of salt
Fried Rice
2 cups cooked rice (preferably day-old jasmine rice)
2 tbsp vegetable oil
1 tbsp sesame oil
1½ tbsp soy sauce
1 tsp oyster sauce
2 cloves garlic, finely chopped
1 small onion, diced
1 small green onion, chopped
1 small carrot, diced (optional)
1 egg (optional for richness)
Pinch of black pepper
Pinch of paprika or chilli flakes (optional)
For Garnish
Fresh spring onions
Lemon slice
Extra king prawn for decoration (optional)
Instructions
1. Prepare the seafood
Heat 1 tbsp butter in a pan.
Place the whole king prawn in first and sear each side for 2–3 minutes until bright orange and glossy. Remove and set aside for garnish.
Add the smaller prawns, calamari rings, mussels, garlic powder, and a pinch of salt.
Toss for 2–3 minutes until cooked and fragrant.
Remove and set aside.
2. Cook the fried rice
In a clean pan or wok, heat vegetable oil.
Add chopped garlic and onions; sauté until fragrant.
Add the carrot (if using) and cook for 1–2 minutes.
Push everything to one side and crack in the egg; scramble lightly until half-set.
Add the rice and break up any lumps.
Pour in soy sauce + oyster sauce + sesame oil.
Stir-fry for 3–4 minutes until the rice becomes golden and well-coated.
Add the cooked seafood mix.
Toss gently to avoid breaking the prawns and calamari.
Season with pepper and adjust salt if needed.
