A memorable dinner at home does not begin with buying more equipment. Often, it begins with giving an ordinary meal a little more attention. The pasta you make regularly, the fish you cook confidently or a well-seasoned vegetable dish can become the centre of an evening you genuinely look forward to.

Start with balance. If the main dish is rich and creamy, something fresh or crisp alongside it can make each mouthful more enjoyable. Then give the table the same attention. Clear away work, letters and packaging. Put out a proper glass, a napkin and a jug of water. Choose music you can comfortably talk over. If you are having wine, select something within your budget that you enjoy; an alcohol-free drink can feel equally special in a beautiful glass.

For dessert, simplicity works. Fruit with yoghurt, a scoop of ice cream with a little chocolate or a small slice of cake can provide a satisfying finish without another complicated recipe.
